christmas biscuits
i'm baking today, so i thought i'd share my family recipe for christmas cookies :)
sugar cookies - double batch 4 eggs - well beaten (set aside) 2 cups butter 2 cups sugar cream together butter & sugar add eggs and 2 teaspoons of vanilla add 5 cups flour 4 teaspoons baking powder throw in a little salt chill :cool: put in wax paper in refrigerator and it's easier to take a small amount out at a time. roll out and cut with cookie cutters bake @ 350 degrees (farenheit - not sure how this translates for european ovens) for 12-15 minutes or until edges are golden brown buttercream frosting 1 pound powdered (confectioners) sugar 1/4 teaspoon salt 1/4 cup milk 1 teaspoon vanilla (i like more) 1/3 cup soft butter mix with food coloring for different colors.. and don't forget to leave some out for santa on christmas eve :icon_sant |

i do have a really good receipe for fudge but i'll have to find it in my recipe box. i'll look for it today and get it to you tomorrow as i will be at the vic tonight watching Damien !!! i'm so excited - this is my first time seeing him (i saw him with fiona apple this summer but lisa wasn't there so i have much more to be excited about tonight!!). i am dragging my husband wiht me - he's not really a fan but i'm hoping after tonight maybe he'll have a new found respect - i think he'll have fun as long as the beer is flowing!!
oh, and my daughter and i will be making your Christmas biscuits on friday (along with some chocolate chip cookies) because she feels that "Santa deserves a little variety" (her 6 yesr old words exactly)! |

aww your daughter sounds so smart, i'll bet she's adorable. how nice of her to think of santa.. we always put chocolate kisses out for santa too, because i convinced the kids santa loooves chocolate ;) ahh christmas is so much more fun when the kids are little.. have fun making cookies with your daughter! i only called them biscuits because that's what the crazy europeans call them hehe.. it's also a really sweet song by mark geary, you might like him if you like damien yay have fun at the gig tonight! the christmas season just seems so much better this year with damien in town, doesn't it? |
Hi Sister! Sorry I forgot to post yesterday. I have 2 receipes for fudge - both really good. One is from my Gramma and the other from my husbands.
3 cups sugar 2/3 cup unsweetened cocoa 1 1/2 cups milk 1/4 tsp salt 1/4 cup butter 1 1/2 tsps vanilla (and if you like nuts, 1 1/2 cups toasted walnuts) Combine sugar, cocoa, milk and salt in heavy saucepan over med. heat. Bring to boil, stirring constantly. Continue cooking (not stirring) until it reaches 235 degrees on candy thermometer (or until reaches soft ball stage - that always makes me laugh for some reason.) Remove from heat and stir in butter and vanilla. Let cool for about one hour until it comes to room temp. With wooden spoon beat until fidge thickens (and loses its gloss). Stir in ewalnuts and spoon into a buttered 8 inch square pan. Cool completely then cut. |
Here is the other one
1 can (13 1/2 oz) evaporated milk 4 1/2 cups sugar 1 stick butter 1 square (1 oz) unsweetened chocolate 1 18 ounce pkg chocolate chips 1 jar (15 oz) marshmallow fluff 1/4 tsp salt 1 tsp vanilla in saucepan mix evaporated milk, sugar, butter and chocolate. heat to a boil. boil 7 minutes stirring constantly. remove from stove. beat in chocolate chips, marshmallow fluff, salt and vanilla. pour into 13x9 inch buttered pan. cut while still warm. I really like both of these receipes. Now I think I may make some myself. And thanks, my daughter really is something. I've always really loved tis time of year but having children does make it so much more fun. My son is only 6 1/2 months so he really has no idea what's going on but he loves to crawl right under the tree and pull ornaments off. But I'll tell you, it's amazing to me how children seem to get on such a high for the week or two before Christmas. My daughter has so much excitment in her I don't know how she keeps going all day long. Some times just watching her makes me tired!! I hope you and your family have a wonderful Christmas!!! - Erin |
I baked the sugar cookies yesterday and yum they are really tasty! I am just eating them :smiley10: . I made stars, moons, hearts and christmas trees hehe. I coloured some hearts red (and made a big heart for the girlfriend of my bro) and i also coloured some trees green. That was great fun :hello2:

they're really good - quite soft, so they don't pull out your teeth (at my age you gotta start thinking of such things..)
I'll have to dust up the recipe and translate it from danish, so it may take a few days. |

I love this recipe I made it for thanksgiving and now I'm making it for breakfast christmas morning.
Banana Bread
Preheat the oven to 325ºF and get started on the rest. Put the flour, baking powder, baking soda and salt in a medium-sized bowl and, using your hands or a wooden spoon, combine well. In a large bowl, mix the melted butter and sugar and beat until blended. Beat in the eggs one at a time, then the mashed bananas. Then, with your wooden spoon, stir in the walnuts, drained raisins and vanilla extract. Add the flour mixture, a third at a time, stirring well after each bit. Scrape into the loaf tin and bake in the middle of the oven for 1 to 1 and a quarter hours. When it's ready, an inserted toothpick or fine skewer should come out cleanish. Leave in the tin on a rack to cool, and eat thickly or thinly sliced, as you prefer. Caramels:
Mix all ingredients in a pot, heat while stirring untill it reaches a temperature of 122 degrees C (=251.6 degrees F). I haven't tried to make these caramels (but tasted them from someone who did :icon_smur ) but I'm told it's important to keep an eye on the temperature here. Pour the mixture into a heat resistant container lined with non-stick (baking) paper. Height must be about 1-2 cm's. (between ½ - 1 inch) Leave it to cool, cut into mouthworthy pieces, EAT!:icon_flow |
