Hi Sister! Sorry I forgot to post yesterday. I have 2 receipes for fudge - both really good. One is from my Gramma and the other from my husbands.
3 cups sugar
2/3 cup unsweetened cocoa
1 1/2 cups milk
1/4 tsp salt
1/4 cup butter
1 1/2 tsps vanilla
(and if you like nuts, 1 1/2 cups toasted walnuts)
Combine sugar, cocoa, milk and salt in heavy saucepan over med. heat. Bring to boil, stirring constantly. Continue cooking (not stirring) until it reaches 235 degrees on candy thermometer (or until reaches soft ball stage - that always makes me laugh for some reason.) Remove from heat and stir in butter and vanilla. Let cool for about one hour until it comes to room temp. With wooden spoon beat until fidge thickens (and loses its gloss). Stir in ewalnuts and spoon into a buttered 8 inch square pan. Cool completely then cut.
